Hi Reader, You come home from a long day and just want to collapse on the couch… …but as soon as you open the door, it’s “What’s for dinner?” Shoot. Dinner. So you start to improvise. Or order takeout. If that sounds familiar, you’re not alone. It’s happened to me so many times, I started a collection of quick, healthy dinner recipes. Here’s one I often share with my clients. It's simple, it's fast, it's loaded with vegan protein. And it's delicious. My omnivore husband loves it too. I often switch it up a bit and add red peppers, green onions, or cilantro, and always serve with a side salad. Usually guacamole or salsa too. Give it a try and let me know what you think.
